Just a few years ago, the term UPF wouldn’t ring any bells with people in the UK, let alone be talked about in everyday conversations.

However recently, ultra-processed foods (UPFs) have been firmly in the spotlight in the world of health and nutrition. Thanks to modern research about the various health impacts of UPFs, UK consumers are becoming more concerned about the impact of UPFs and are becoming more deliberate in the foods they buy.

These concerns come from studies which have observed the connection between increased consumption of UPFs and poorer health. In 2023, the Scientific Advisory Committee on Nutrition (SACN) called these findings ‘concerning’. Even the UK Government have acknowledged this research, promising to take action to reduce the impact of UPFs on the country, particularly on children, by enforcing stronger regulations on junk food advertising.

Here at Kitchen by Liquid, we are big believers in fresh and healthy food. That’s why we encourage UPF-free meals and accommodate this through our large variety of services and the expert knowledge of our in-house developmental chef.

But what are UPFs, and why are we only just hearing about them now? In this blog, we’ll explore how ultra-processed foods are made, and what specifically about them leads to significant health impacts.

What are Ultra-Processed Foods (UPFs)?

UPFs are industrial formulations made from food extracts such as fats and sugar, constituents or synthesised ingredients like additives and flavour enhancers.

An easy way to identify UPFs is to check for ingredients which are rarely used in home kitchens, as suggested by the Food Standards Agency. If you don't have an ingredient in your cupboard at home, then it is probably a UPF. Particularly look out for additives or emulsifiers.

The Health Debate

Since the research has come out regarding the potentially harmful impact of these foods, there has been an element of uncertainty around whether or not the connection between UPFs and poorer health is coincidental, or an effect of consuming this type of food.

As mentioned previously, the SACN called the association concerning, but added that there were limitations in the evidence as it was unclear whether the foods were unhealthy because of their high levels of fats and sugars or due to their processing.

This has led to some confusion in the UK over whether we need to cut out UPFs completely from our daily meals and snacks, or if we simply need to watch our calorie intake on a more general level.

Public Perception and Awareness

Over the past few years, there has been a growing awareness of UPFs, particularly among UK consumers.

An article by The Agriculture and Horticulture Development Board (AHDB) states that 94% of UK consumers have heard of UPFs and 64% of those people view ultra-processed foods negatively. The article also shows that in December 2024 32% of shoppers were actively reducing the amount of UPFs in their home and in their diet.

But what are the health impacts of UPFs?

As mentioned above, UPFs are often thought of negatively, and they have been linked to many health issues such as type 2 diabetes and cardiovascular disease. A recent article in The Lancet suggests that in the UK and the USA, 14% of premature deaths (between 30 and 69 years old) are estimated to be caused by the consistent consumption of UPFs. This equated to 18,000 deaths in the UK in 2018.

While this data is from 7 years ago, it demonstrates the impacts of UPFs on health and the importance of public awareness. Here at Kitchen by Liquid, we offer a recipe development service to help lower the amount of UPFs in your food, yet still create delicious tasting recipes.
